About The Producer
Castell d’Age is the creation of three generations of women in the Junyent family, located in the Beguda Baixa, in the heart of the Alt Penedés region. It all started with Aurèlia Figuera and then was transformed by Anne Marie Comtesse in the late 1980s with the production of Cava. Anne Marie is a pioneer in introducing organic farming in the region. With the addition of her daughter Olivia Junyent to the business, they are now certified organic and biodynamic agriculture, a method that respects the relationship between humans and earth.
Terroir & Vineyard Practices:
The Bodega is certified organic and biodynamic at the strictest levels. The fruit is sourced from the slate, clay-limestone soils in Can Pere Vills, Can Gener, and Can Aguilera vineyards.
Tasting Notes
Straw yellow in color with green tones. Pleasant and fresh on the palate with delicate brioche notes against a backdrop of ripe fruits and nuts. Fine, slow-moving beads and a crown mousse. Full finish with good length and long-lasting flavor. Perfect for serving with appetizers to desserts, particularly seafood, fish, and semi-matured cheeses.
Vinification
Night harvests. Made using the traditional method, with the first fermentation taking place in tank and the second taking place in the bottle. Minimum of 20 months aging in underground cellars.
