Terroir & Vineyard Practices:

This comes from a plot of .93 ha in deep clay soil woth east-southeast exposure. No fertilizer, but soil ammendments as needed.

Tasting Notes

Yellow-green in color, this wine has a fine and subtle nose that blossoms with fresh yellow fruit aromas. It has remarkable balance between maturity and freshness. The finish has a beautiful mineral length with finesse.

Vinification

Manual harvesting with gentle pressing by a pneumatic press. No settling. Chaptalization if needed. Fermentation in casks (300 L) and Demimuis (600L). Temperature control in barrels. Very long fermentation: 90 days. malolactic fermentation in casks. Wine moved using compressed air. Light filtration. Bottling by gravity after 17 months.
