Domaine J. Laurens is located near the famous city of Carcassonne in France's wine region of Limoux. Since the Domaine's beginning, they have been recognized for the high-quality of their sparkling wines. The region of Limoux is the true birthplace of sparkling wines and predates the development of Champagne.In 2021 the Domaine received an HVC3 (“High Environmental Value” Certification), indicating farming practices are conducted sustainably. Level 3 is the highest level awarded to wineries that have made accommodations for the entire estate operation.Terroir & Vineyard Practices:
The vineyards are in the Autan Terroir, in the heart of the appelation of Limoux. The Autan terroir is sheltered from the climatic influences of the east and west by two mountain ranges (the Corbieres and the Chalabrais). The climate is hot and dry but with cool nights because of the altitude, a balance that allows the grapes to fully mature yet also to maintain their acidity, which ideal for sparkling wines as it imparts freshness. The Mauzac is mainly planted in an area called "the wind mill" becasue of the wind mill that rests on the site.Tasting Notes
Ideal as an aperitif or with a dish such as marinated salmon, this Blanquette de Limoux boasts aromas of fresh fruit, green apple, acacia flowers, and apricot - complete with toasted nuances. Full of finesse and freshness.Vinification
Fully hand-harvested, the harvest is quickly transported to the domaine using small crates to protect the grapes. The Blanquette is made in the traditional method with delicate pneumatic pressing. It rests on its lees for 9 months at minimum. Low temperatures are imposed during fermentation to guard the aromas. There is no malolactic fermentation.Press
