About The Producer
Jerome Collas’s domaine is located in the heart of Catalan country. He selected the name “La Toupie” or “spinning top” for the family heirloom that was passed down through his family for multiple generations, and the balanced style of his wines.
Terroir & Vineyard Practices:
The grapes come from two plots on clay and brown schist, limestone soils. Yields are kept low (35hl/ha).
Tasting Notes
Fine attack with white fruits such as pears. The wine is long and structured in the mouth with a freshness and pleasing salinity on the finish. Pairs beautifully with appetizers, seafood, white meats and some cheeses. Drink within 1 to 3 years.
Vinification
This cuvee is named in honor of Jérôme's daughters. He chose "SALTO", the name of a figure of dance and gymnastics his daughter's enjoy. The "Petit" is because it is an easy wine to drink. It's hand harvested only in the morning. Pressed and vinified at low temperature (16°C). Fermented in vat and then aged for 4 months in vats. Bottled in February 2017.
