About The Producer

Jean Luc and Véronique Dressayre have a passion for the “vine and wine”. In 2004 they choose the small town of Azillanet, located in the heart of Minervois, to build their dream. Basically they like to say that they were seduced by the diversity of its landscapes and its soils: the terroir of the Livinière and that of the Mourels. Their first vintage was in 2007. The Dressayre’s are helping to create the new emerging Languedoc. This truly is a family affair (they even named the winery after their three daughters: Pauline, Marion and Helene)

Terroir & Vineyard Practices:

The 30 year-old vines grow in clay and limestone soil. Handpicked at the peak of maturity.

Tasting Notes

A hearty red wine from Minervois chock-a-block of wild berry, blackberry, black currant flavors. Darkly colored it finishes with pleasing spice and licorice notes. The wine speaks of sunshine, warm days, and a rugged landscape that naturally reveals itself through concentration, complexity, and authenticity. Perfect for pairing with charcuterie, roasted chicken and hard cheeses. This rich wine is easy to enjoy.

Vinification

Made using traditonal methods. Jean-Luc presses and vinifies each grape separately before he figures out the blend. Once that’s done he blends the wine and then lets it age up to 18 months prior to bottling.
