About The Producer
Cyril Testut is one of the top winemakers in Chablis. The Testut family has 13 hectares of vineyards (previously owned by Cistercian agronomist monks) located in the historic heart of Chablis. The vineyard sites are located atop the famous Kimmeridgian soil that yields precise Chardonnays loaded with legendary minerality and acidity.
Terroir & Vineyard Practices:
The soils are composed of marls and calcareous clayey from the Kimmeridgian period. The fruit for this Grand Cru comes from a .32 ha plot that faces south. The vines are 50 years old and are uncloned.
Tasting Notes
Rich and powerful. A strong mineral palate balances the power of the ripe fruit. A wine that will show full potential in 5 to 8 years.
Vinification
Two thirds in a stainless steel tank and one third in a demi-muid (600 liter French oak barrel). Blending takes place after racking. Static settling for 24-48 hours. Aged for at least 16 months minimum before bottling.
