About The Producer
Domaine J.Laurens was founded in Limoux in the 1980s by Michel Dervin, an expert from the Champagne region. Jacques Calvel purchased the Domaine in 2002 and completely restructured and modernized the domaine, its vineyards, and its equipment, from top to bottom, in order to guarantee high quality every year. The Domaine is located close to Carcassonne, near the small village of La Digne d'Aval, and is comprised of 30 hectares of vines in the Limoux AOP. It was here in Limoux, in 1531, that the first sparkling wine in the world was invented by a monk in the cellars of the Benedictine Saint Hilaire Abbey. In 2021 the Domaine received an HVC3 (“High Environmental Value” Certification), indicating farming practices are conducted sustainably. Level 3 is the highest level awarded to wineries that have made accommodations for the entire estate operation.
Terroir & Vineyard Practices:
They take great care to hand harvest and observe the AOC laws using traditional grapes. In Limoux that includes the indigenous white grape, Mauzac.
Tasting Notes
An intense and complex sparkler with citrus, dried fruits, honey, and a touch of Granny Smith apple. It’s a well-rounded wine that hints of light toast with fresh fruits and lime flavors on the finish.
Vinification
This an exceptional wine - a tête de cuvée - upon which they built their reputation.This sparkling wine is made in the "Traditional" method: the wine undergoes two fermentations in bottle and remains on the less for a minimum of 12 months. They take great care to hand harvest and observe the AOC laws using traditional grapes. In Limoux that includes the indigenous white grape, Mauzac. "Les Graimenous" is the name of the area where the doamine is located, which means "grass" in occitan.
