About The Producer

Jerome Collas’s domaine is located in the heart of Catalan country. He selected the name “La Toupie” or “spinning top” for the family heirloom that was passed down through his family for multiple generations, and the balanced style of his wines.

Terroir & Vineyard Practices:

This wine is made from a blend of two vineyards: one to the south of Maury, the second one to the north (250m altitude). The wines are more than 50+ years-old. Yields are kept low (less than 20hl/ha). Only schist soils.

Tasting Notes

A dark deep robe with ripe fruit aromas. Intense flavors, both silky and powerfull tanins, warm spices, complex ,and very long mineral finish. Serve with red meats, game and some cheeses.

Vinification

"Sur 1 fil" is a French expression that means the difficulty of finding balance, like a tightrope walker. In this wine, he selects very old vines of Grenache only from schist soils, because of this terroir of schist, he is able to keep some minerality and freshness at the end of mouth. His aim is to achieve the optimal maturity and the characteristics of Grenache without its heavy, warm, oxidative features. This is hand harvested. Cold settling for two days, then fermentation in steel tanks with controled temperature (25°C), one month maceration. Extraction by pumping over and “pigeage”. Eight months in vat.Light filtration before bottling in June 2017.
